Brown meat in a Dutch oven. Add tomatoes, salt, pepper, rice, onion, bay
leaf, peas and carrots. Cover; cook over high heat until mixture comes
to a boil.
Reduce heat and let simmer for 1 hour. Remove bay leaf; serve.
Yield: 4 to 6 servings
Note: If you cannot find ground ham and the butcher will not grind it
for you, buy a ham steak or deli ham and chop it finely in the food
processor
