We were at the Historical Society yesterday and I picked up a cookbook titled "Blue And Grey Cookery....Authentic Recipes From The Civil War Years! I will post some of these recipes with Civil War in the header in case anyone's interested! It says some recipes were doctored so we can make them today...ie, They didn't measure things like we do...they used a pinch of this or that, and they made their own baking powder back then and didn't have yeast cakes like we do today! So some recipes have been
modernized so we can use today's ingredients!
1 lb. navy beans
1 1/2 lb. ham-butt end
2 C. tomatoes, strained
2 tsp. parsley
1/2 C. diced potatoes
1/2 C. chopped onion
2 C. diced celery
salt and pepper
Cover the beans with water and soak overnight. Drain.
Add more water and cook till almost soft
Wash the ham and cover with cold water. Boil till tender. Skim off fat
Add the beans and other vegetables and season with salt and pepper
