A spicy delight with beans, corn and chicken, easily prepared on the
stovetop.
1 cup chopped onion
1 clove garlic, minced
1 tablespoon vegetable oil
1 pound ground turkey
1 cup chicken broth
1 (14-1/2-ounce) can stewed tomatoes
1/3 cup Grey Poupon Dijon Mustard
1 tablespoon chili powder
1/8 to 1/4 teaspoon ground red pepper
1 (15-ounce) can cannellini beans, drained and rinsed
1(8-ounce) can corn, drained
Tortilla chips and shredded Cheddar cheese, optional
Cook and stir onions and garlic in oil in 3-quart saucepan over
medium-high heat until tender. Add turkey; cook until done, stirring
occasionally to break up meat. Drain.
Stir in chicken broth, tomatoes, mustard, chili powder and pepper. Heat to a boil; reduce heat. Simmer for 10 minutes. Stir in beans and corn; cook for 5 minutes.
Serve topped with tortilla chips and shredded cheese if desired.
