Heat oil in large saucepan over medium heat. Add onions and carrots and cook, stirring until onions are soft, 8-10 minutes.
Add vegetable broth and bring to boil. Cover pot, then lower heat to simmer and cook for 20 minutes. Dump soup in blender and puree until smooth.
Pour back into pot; add rice and cook, covered, for 15 minutes, until rice is soft. Stir in peanut butter, hot pepper sauce and salt, to taste. Heat through and serve.
